Figs: this recipe calls for fresh figs. If you cannot find fresh figs, you can substitute with dried figs. Note however, that you may need to cook the jam mixture for longer, and you may need to adjust the amount of sugar you use.
Lemon: I recommend using the juice from a fresh lemon for this recipe since you will need the juice and the zest from it. Be sure to remove any seeds that come out when juicing your lemons before adding the juice to the saucepan!
Thyme: I used fresh thyme leaves to make this jam, however you can used dry thyme leaves if you don't have fresh on hand. I recommend you use approximately 1/3 of what the recipe calls for if using dried thyme leaves.
