Dad's Mushroom Pork Bowls

My dad’s mushroom pork bowls are a dish I remember from childhood. He would make this every so often and it was pure comfort for me.


  • 1 tsp olive oil
  • 4 oz mushrooms, sliced
  • 1 lb pork chops, sliced into small bite-sized pieces
  • 3 cups leftover healthy creamy mushroom soup OR 1 can of cream of mushroom soup


  1. Heat a large non-stick skillet over medium-high heat.  Add olive oil and mushrooms.  Sauté until mushrooms are soft and moisture has evaporated, approximately 3 minutes.  
  2. Add the pork and sear it on each side.  Sauté until fully cooked, approximately 5 minutes.  Add mushroom soup over the pork and cook until heated through, approximately 2 to 3 minutes.  Serve over rice or egg noodles.
