Healthy Creamy Mashed Potatoes

- 1 + 1/2 lb yellow potatoes, sliced into chunks
- 3/4 cup oat milk
- 3 tsp butter
- OPTIONAL: 4 cloves roasted garlic
- In a large pot, boil the potatoes in salted water. Boil until they are fork-tender – this should take approximately 15 minutes of boiling. I recommend to start checking them at about 10 minutes, and then check every 5 minutes after that.
- Once the potatoes are cooked, drain the potatoes and keep them in the pot. Add the oat milk and butter. OPTIONAL: add the roasted garlic. Using a potato masher or large fork, mash the potatoes until they reach your desired consistency. Top with some additional butter, and serve!
