Mom's Dijon Pork Tenderloin
On cozy nights in, I love to make my mom’s Dijon pork tenderloin! It is extremely easy to make with minimal ingredients – try it tonight!
- 2 tbsp Dijon mustard
- 2 tsp olive oil
- 1 tsp thyme (you can use either fresh or dried)
- 1/2 tsp rosemary
- 1 pork tenderloin
- Preheat the oven to 400F. In a small mixing bowl, whisk together the mustard, oil, thyme, and rosemary.
- Place the pork tenderloin on a parchment lined baking sheet and spread the mustard mixture evenly over the pork tenderloin.
- Roast in the oven for 25 to 35 minutes, until the meat is slightly pink inside and the meat thermometer reads 160F.
