Mom's Dijon Pork Tenderloin

On cozy nights in, I love to make my mom’s Dijon pork tenderloin! It is extremely easy to make with minimal ingredients – try it tonight!


  • 2 tbsp Dijon mustard
  • 2 tsp olive oil
  • 1 tsp thyme (you can use either fresh or dried)
  • 1/2 tsp rosemary
  • 1 pork tenderloin


  1. Preheat the oven to 400F.  In a small mixing bowl, whisk together the mustard, oil, thyme, and rosemary.
  2. Place the pork tenderloin on a parchment lined baking sheet and spread the mustard mixture evenly over the pork tenderloin.
  3. Roast in the oven for 25 to 35 minutes, until the meat is slightly pink inside and the meat thermometer reads 160F.
