For most of us, the fifth of May is an excuse for us to enjoy Mexican recipes and hold a Cinco de Mayo party! Although it does not fall on a taco Tuesday this year, it is as good an excuse as any to enjoy your favorite Mexican food.

What Does Cinco de Mayo Celebrate?

Cinco de Mayo is a day to celebrate the Mexican army's victory over the French at the Battle of Puebla on May 5, 1862. A fun fact about this day is that the Mexican Army was heavily outnumbered by the French troops which were also much better equipped. The small group of loyal Mexican men in Puebla were able to pull of a miraculous victory that helped galvanize the Mexican people. While the war with France lasted for six more years, this was seen as a key victory that helped Mexico eventually drive the French army out! The fifth of May is to commemorate the Mexican army's unlikely victory over the French that day. It is different than Mexico's Independence Day, which is celebrated in September.

These tacos are delicious. They are one of my go-to weeknight meals for when we are busy and on the go! The chicken breast for the taco filling is juicy and tender from the slow cooker. It has the most amazing flavor from the salsa verde and spice mix. It tastes like it came from one of the local Mexican restaurants here! These tacos are complete, with corn tortillas and a red cabbage, cilantro and lime juice slaw.  This will also be one of your favorite easy recipes for your Cinco de Mayo celebration!

Another great recipe for the fifth of May is this Mexican spice rubbed pork tenderloin. The best part of this recipe is the spice rub which adds bright colors and flavors to this dish! You could serve this as a main course with some Mexican side dishes such as street corn or refried beans. You could also use the meat as the filling for an amazing burrito. Fill it with sour cream, fresh salsa, your best guacamole, and other favorite toppings. Wrap in flour tortillas for an easy and delicious burrito. Either way would be delicious!

This is one of my best Cinco de Mayo recipes. The fresh ingredients in this street corn are perfect for any Mexican fiesta. Fresh cilantro and spicy jalapeno bring amazing flavor to this dish. I actually tasted the most amazing Mexican street corn while I was in Hong Kong for work. That inspired many iterations of this dish. This recipe is the result which was inspired by that amazing meal in Hong Kong! The simple ingredients bring this mix between Mexican rice and street corn together with chili powder and cumin. It is delicious and the entire family will love it!

Taquitos are always party favorites, and these breakfast taquitos are no exception. Julian and I are huge fans of this recipe for quick breakfasts on the go. Serve with light sour cream and green onions or salsa for the perfect bite-sized treat.

If you are in the mood for soup, I've got you! This is another of my easy dinner options that has such great fresh flavors. Top with corn chips, red onions, shredded iceberg lettuce and some fresh avocados and you've got yourself one amazing meal! While hominy can be difficult to source depending on the area you live in, it is worth the effort! It adds the perfect texture to this simple soup. The tomatillos and fresh cilantro also packs a lot of flavor in this dish. Trust me, it looks simple yet tastes anything but!

Of course, no Mexican fiesta is complete without tortilla chips, pico de gallo, and fresh salsa. Margaritas are also in order! These watermelon margaritas would be incredible to serve up with your feast.

Due to covid restrictions where I live, Julian and I will be celebrating and eating our Cinco de Mayo foods at home. Hopefully we will be able to hold a big party for this festive holiday next year.
