These healthy tacos are perfect for a tasty and easy dinner that the whole family will love! The chicken is prepared in the slow cooker, which makes it one of my favorite easy recipes. The best part about slow cooker recipes is that you can set your meal up in the morning, and it is ready to eat with no fuss at dinner time. They are a lifesaver on busy weeknights! Serve with a side of tortilla chips and creamy avocado guacamole for the perfect taco night dinner!

How to Make Easy and Healthy Chicken Tacos

While the full recipe instructions are available below, here are some tips to consider when preparing this delicious taco recipe.

  • First, you will prepare your homemade taco seasoning. You will mix together chili powder, paprika, cumin, onion powder, salt, garlic powder, and cayenne. I recommend you mix using a fork or a whisk to mix the spices. This is important, because it will make your taco seasoning consistent with every scoop. If you don't have the time or spices to make your own homemade taco seasoning, you can use Old El Paso.
  • Now, we will prepare our taco filling. Rub your chicken breasts with the taco seasoning. Place the chicken in the slow cooker and top with the salsa verde. Set the slow cooker on low for eight hours or high for four hours. Simply set it and forget it!
  • While the chicken cooks, we will prepare our extra toppings. In a small bowl, shred your red cabbage and toss with lime juice, cilantro and salt. These fresh ingredients create the perfect slaw for these tasty tacos.
  • Once the chicken is cooked, shred it into small pieces and place back into the slow cooker with sauce. To prepare your soft tacos, set your stove to medium heat. Place the soft corn tortillas directly on the element with a pair of tongs. Be careful, this will only take a maximum of thirty seconds per side! Flip the tortilla and then remove from the heat once each side is slightly charred. Place on a plate and cover with a kitchen towel.

The best way to assemble your street tacos is to add your slaw and your favorite taco toppings, then add your shredded chicken.

Toppings to Serve with My Easy and Healthy Chicken Tacos

This is one of my favorite healthy taco recipes. And while this recipe calls for the red cabbage slaw described above, there are so many options for toppings you can add to this easy taco recipe!

  • I always love to add low fat sour cream or plain Greek yogurt. I find that plain Greek yogurt has a great creamy texture and tang much like sour cream but is much healthier!
  • Black beans are a great ingredient full of fiber and protein. These will help keep you full for longer!
  • Red or green bell peppers are delicious and add a beautiful pop of color!
  • Red onion adds a great peppery flavor to your tacos. If you prefer, you can always make your own pickled red onion. You can also use store bought pickled red onions to save time!
  • I also love fresh salsa on my tacos. One cool twist would be to add corn salsa for a sweet and spicy kick!
  • Light cheddar cheese is always delicious on tacos! I am a cheese fiend, so it is always a good idea to add it!
  • Like fresh salsa, pico de gallo is a delicious addition of delicious fresh veggies to your meal!

A great low carb option would be to use lettuce wraps or low carb tortillas instead of regular taco shells. Just because you are focusing on healthy eating does not mean you can't enjoy delicious tacos!

Other Healthy Substitutions

Chicken breasts are already a very healthy taco meat since they are zero points on weight watchers! If you wish to use a different meat, I would recommend using other lean proteins such as shrimp or extra lean ground turkey taco meat. A great option for vegetarian tacos would be to roast sweet potato or some brussels sprouts! Tacos often get a bad reputation as a junk food, but prepared the right way, they can be a great addition to a healthy diet!

Recommendations for Leftovers

If you have leftover taco meat, then I recommend refrigerating them in an airtight container. This is a great recipe for meal prep, because you can add the leftover meat to rice and romaine lettuce to create an easy and healthy taco salad recipe. Another idea would be to incorporate the meat into a taco casserole. The possibilities are endless!

Ingredients

For the Taco Filling:

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp Mexican Spice Rub or 1 pack of Old El Paso low sodium taco seasoning
  • 1 cup salsa verde (I love to use Herdez)

For the Tacos:

  • 1 cup red cabbage, shredded
  • 1 tbsp fresh lime juice (approx. 1/2 of one lime)
  • 1/4 cup fresh cilantro, chopped
  • 1/8 tsp salt
  • 1 medium hass avocado, sliced
  • 12 small corn tortillas
  • extra lime wedges for squeezing (optional)

Instructions

For the Taco Filling:

  1. Rub the chicken breasts with the spice rub and place in slow cooker. Pour salsa verde over the chicken and cover. Set slow cooker on LOW for 8 hours or HIGH for 4 hours.
  2. Once the chicken is cooked, shred apart in the slow cooker using tongs or two forks. It will come apart easily! Using a slotted spoon, remove from slow cooker and place in your tacos.

For the Tacos:

  1. In a large bowl, add your red cabbage, lime juice, cilantro, and salt. Toss to combined to create a slaw.
  2. Heat tortillas over the open flame of a gas stove on medium-low for up to 30 seconds per side, until they start to char on each side. If you do not have a gas stove, use a pan with no oil in it.
  3. Assemble your tacos with avocado, red cabbage slaw, and chicken. Squeeze some extra lime juice over them and add any extra toppings you would like. Enjoy!
