Super Bowl Sunday happens to be my dad's birthday. The man also loves chicken wings. I didn't actually realize the extent of his love for chicken wings until I was older. He always orders chicken wings to start when we are out for a casual dinner. Any time I have wings now, I think of him.

Therefore, I decided to make these Buffalo chicken wings in his honor to celebrate his birthday as well as Super Bowl! These drumsticks are much healthier than the pub variety, since they are baked not fried. I also lightened up the sauce a bit. While this recipe is not overly spicy, you can always adjust the amount of Buffalo sauce you include with your chicken to suit your preference.

No Buffalo chicken is complete without ranch dipping sauce! I have also included the recipe for my lightened up ranch sauce here. It tastes remarkably like the real thing!

How to Make the Best Homemade Buffalo Chicken Drumsticks

While the full recipe instructions are available below, here are some tips to make the best game day Buffalo chicken!

  • First, pat the drumsticks with a paper towel to make sure they are dry. This is important, because it ensures that the skin will get crispy while baking in the oven.
  • Now, toss the drumsticks with the olive oil, salt, pepper, paprika, and garlic powder until evenly coated. Then you will bake them on a parchment lined baking sheet. Make sure the drumsticks are not too close together. This will help crisp the skin.
  • While the drumsticks are cooking, we will make our sauces. Ten minutes before the drumsticks are finished cooking, melt the butter and mix it with the Buffalo sauce and set aside. You will toss the cooked drumsticks with this.
  • Next, To make the ranch sauce, mix all of the ingredients together except the water. Gradually add the water until it reaches the right consistency and save for serving.
  • Once the drumsticks are cooked, toss with the Buffalo and butter sauce and serve with the ranch dipping sauce. Enjoy!

Ingredients

For the Drumsticks:

  • 1 lb chicken drumsticks (approx. 4)
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 2 tbsp salted butter (melted)
  • 2 tbsp Buffalo sauce

For the Ranch Sauce:

  • 1/2 cup non-fat plain Greek yogurt
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp honey
  • 1 tsp red onion, diced very finely
  • 2 tbsp water (you may need more or less)

Instructions

  1. Preheat your oven to 400F. In a large mixing bowl, toss the drumsticks together with the olive oil, salt, pepper, paprika, and garlic powder until evenly coated. Place on a parchment lined baking sheet and bake for 20 to 25 minutes, until cooked through and the internal temperature reads 165F.
  2. 10 minutes before the chicken is finished cooking, melt the butter and mix the Buffalo sauce with it and set aside. In a small to medium sized mixing bowl, mix together all of the ranch sauce ingredients. Gradually mix in the water, until you reach your desired consistency. Set aside for serving.
  3. Once the chicken is cooked, let it cool for 3 to 5 minutes. Toss the drumsticks with the butter and Buffalo sauce mixture until evenly coated. Serve with the ranch dipping sauce and enjoy!
