Cobbler is an incredibly easy dessert to bake using fresh, in season fruits.  Using more of the peaches I brought home from our visit to the Okanagan earlier this month, I made this cobbler for dessert at a family dinner.  I added cardamom to the typical cinnamon used in cobblers.  This added a unique and complex flavor profile that is perfectly complemented with sweetness of the peaches.

How to Make the Best Cardamom Peach Cobbler

While the full recipe details are available below, here are some tips to make the best cobbler:

  • Peaches: make sure you remove the skin from the peaches you use in this recipe.  This is important because the skin can become tough when baked into the batter.  Slice your peaches and cook them in a sauce pan until they are softened before adding them to the dish.
  • Butter: you want to melt the butter in the pan before adding the batter and peaches.  This is important because it helps to create a dense batter that the peaches will rest on.
  • Batter: the batter for your cobbler will appear to be runny.  This is okay, because it will become dense as it bakes in the oven.  It is important that you add the batter to the hot baking dish once the butter has melted.  Once you have added the batter, do not stir it.  Add the peaches on top and do not stir the mixture.  As the cobbler bakes, the flavors will combine to make a truly delicious dessert!

Ingredients


  • 1/2 cup unsalted butter

For the Peaches:

  • 4 cups fresh peaches, peeled and sliced (approximately 4 medium-sized peaches)
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/8 tsp vanilla
  • 1 cup granulated sugar

For the Batter:

  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup whole milk
  • 1/8 tsp vanilla

Instructions

  1. Preheat oven to 375F.  Slice the butter into pieces and add to a 9 x 13 inch baking dish.  Add the dish to the oven as it preheats to melt the butter.  Once the butter has melted, remove from the oven.
  2. Peaches: In a  saucepan, add the peaches, sugar, lemon juice, cinnamon, cardamom, and vanilla.  Bring to a boil over high heat, stirring constantly.  Cook until sugar is dissolved and peaches are soft, approximately 5 minutes.
  3. Batter: In a large mixing bowl, whisk together the sugar, flour, baking powder, and salt.  Add the whole milk and vanilla and stir until the mixture is well combined.  It should be relatively runny.
  4. Add the batter to the baking dish with the melted butter, shaking to even the batter out.  Do not stir the batter once it has been added the baking dish.  Pour the peaches over the batter.  Bake in the oven for 40 to 45 minutes, until golden brown.  Serve warm or cool.
