Shrimp is a great protein to cook in summer. Try these chickpea turmeric shrimp bowls for a fast, healthy and delicious dinner tonight!

With the weather getting hot in Vancouver, I have been looking for ways to reduce the time over the stove.  Shrimp is the perfect solution for this, since it cooks so quickly! I usually keep a pack of frozen shrimp on hand for nights I need to make a healthy dinner in a pinch.

This shrimp dish also uses pantry staples, like chickpeas, which make it easy to make with little preparation.  Turmeric also makes an appearance in this dish, which is full of health benefits.  It is known to be a powerful anti-inflammatory and antioxidant, so I try to incorporate it into my diet as much as possible.

How to Make the Best Chickpea Turmeric Shrimp Bowls

While the full recipe instructions are available below, I have included some tips for you here:

  • Shrimp: you want to make sure you use a shrimp that is not too large, but has enough meat to carry the dish.  If you are using frozen shrimp, you want to make sure they have fully thawed before cooking.  This is important, because partially frozen shrimp will not cook evenly.
  • Chickpeas: you want to drain and rinse your chickpeas before adding them to the skillet.  This is important because reduces the salt and starch content the chickpeas, making them easier to digest.
  • Pepper: I generally prefer to cut the pepper into small pieces, since an other main component of the meal is the chickpeas.  If you do not have a pepper handy, you can substitute for a tomato and it works just as well.
  • Serving:  I recommend you serve this over a grain or starch of some kind, such as rice or quinoa.  I prefer rice, but you can top this over anything you would like.  You could even serve over lettuce to reduce the carbohydrate content of the bowl.

Chickpea Turmeric Shrimp Bowls

Ingredients

  • 2 tsp olive oil
  • 3 cloves garlic, crushed
  • 1 tbsp fresh ginger, chopped fine
  • 1 red pepper, diced fine
  • 1/2 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1 tsp turmeric
  • 1 large can of chickpeas (540ml), drained and rinsed
  • 1lb frozen shrimp, thawed
  • 1/4 cup chicken broth
  • 1/4 cup dry white wine

Instructions

  1. Heat a non-stick skillet on medium high and add olive oil.
  2. Add garlic and ginger to pan and cook until fragrant and tender, approximately 1 minute.
  3. Add red pepper to the pan and cook until tender, stirring frequently, approximately 5 minutes.
  4. Add spices to the pan and chickpeas.  Stir to ensure chickpeas are coated evenly with the spices.  Cook until the chickpeas are starting to get crispy, approximately 8 minutes.
  5. Add shrimp to the pan and cook until starting to become firm, approximately 2 minute.
  6. Turn heat to high and add broth and wine.  Cook until the liquid thickens and shrimp are cooked through, approximately 3 minutes.
