This easy baked chicken Kyiv recipe is simple to prepare and tastes so much better than the freezer variety! The fresh ingredients in the herb butter and coating of bread crumbs, this is a wonderful dinner to make ahead for company or for an elevated weeknight dinner. This chicken recipe is truly a family favorite!

I first discovered chicken Kyiv at one of my family's favorite restaurants in London - Ffiona's. Her chicken is one of the most succulent chicken breast I have tasted. The result is impossibly juicy on the inside, yet it still has the perfect crispy outer crust. It also has a light texture but is still so flavorful. As Ffiona's menu suggests, it's probably the best chicken Kyiv I have had in the world!

I set out at home to make a lightened up version that still has delicious flavor!

What is Chicken Kyiv?

Chicken Kyiv is a traditional dish of Russian and Ukranian culture. It is made with pounded chicken fillets rolled around cold herb butter. It then gets coated with eggs and bread crumbs and then is fried. This and other stuffed chicken breasts are traditionally named côtelette de volaille in Russian and Ukranian.

My version of chicken Kyiv still has the delicious herbed butter center and crispy bread crumb crust. However, it is much lighter because the chicken is baked instead of being pan fried or deep fried.

What Do I Need to Make Baked Chicken Kyiv?

While the full list of ingredients is available in the recipe card below, here are some tips on what to incorporate into one of my favorite easy recipes.

  • Unsalted butter
  • Fresh parsley
  • Fresh thyme
  • Fresh Tarragon
  • Lemon juice
  • Garlic powder
  • Salt
  • Cracked black pepper
  • Boneless skinless chicken breasts
  • Fresh eggs
  • Panko bread crumbs
  • Ground paprika

How to Prepare Easy Baked Chicken Kyiv

While the full instructions are available below, here are some tips to make my easy chicken Kyiv recipe.

  • First, we will make our herbed garlic butter. You want to have your butter softened so that it is easier to work with when we add our herbs. Using a sharp knife, slice the fresh herbs very finely. In a small bowl, mix together the herbs, quarter teaspoon garlic powder, lemon juice, salt and pepper, and butter with a fork until well combined. Roll the butter into a log and wrap in a couple pieces of plastic wrap. Place in the fridge or freezer to harden.
  • While our butter hardens, let's prepare the chicken! Place your large chicken breasts in a single layer between a piece of plastic wrap or parchment paper. Using a rolling pin or the flat side of a meat mallet, pound chicken until you have evenly thin chicken breasts. If your chicken is exceptionally large, cut it into even halves.
  • Once we have a cold stick of the butter mixture ready and we have prepared our chicken, it is time to roll them! Cut the cold butter and place a piece of butter in the center of each chicken breast. Wrap the chicken breasts around the butter and secure together using a toothpick. Place the rolled chicken breast on a plate and chill in the fridge for thirty minutes to overnight. You do not want to coat the chicken with breadcrumbs until just before your are ready to cook the chicken. This is because we want it to be crispy, and having the bread crumbs on the chicken breast for too long will make it soggy.
  • Now that our chicken has been prepared we are ready to prepare our egg wash and cook our meal! Preheat your oven to 375 degrees F. In a shallow bowl, beat egg until it is well combined. Place the bread crumbs in a separate shallow bowl and whisk it together with the paprika. Coat your chicken rolls in the egg mixture. Then coat it with your bread crumb mixture. Place in a prepared baking dish and spray lightly with your olive oil. Bake for thirty to forty minutes, until a meat thermometer reads an internal temperature of 165 degrees F. You will know your chicken is ready when the crust starts to turn golden brown. Serve with your favorite side dish and enjoy!

The result is an irresistibly delicious main dish. The melted butter on the inside with the flavors of the fresh herbs and the crispy bread crumb crust will surely make this a favorite in your home!

Ingredients

For the Herbed Butter:

  • 1/4 cup unsalted butter, soft
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh chives, chopped
  • 1 tsp fresh tarragon, chopped
  • 1 tsp lemon juice
  • 1/4 tsp garlic powder
  • salt and pepper, to taste

For the Chicken:

  • 2 chicken breasts, pounded thin (approximately 1lb)
  • 1 egg, beaten
  • 1/2 cup panko bread crumbs
  • 1/2 tsp paprika

Instructions

  1. In a small bowl, mix together the herbs, quarter teaspoon garlic powder, lemon juice, salt and pepper, and butter with a fork until well combined.
