I had a craving for Mongolian beef the other day, but wanted to lighten it up. So I made this Mongolian chicken for us instead! This recipe draws inspiration from traditional Mongolian beef, but uses chicken and tweaks the sauce to lighten things up. Julian and I loved this take out fake out meal!

What is Mongolian Chicken?

This Mongolian chicken recipe is a play on Mongolian Beef, which is a dish that is served in many Chinese food restaurants. It consists of beef with a sticky sauce made from a mixture of brown sugar and soy sauce. It is also usually served over rice with some veggies. I simply made a couple of tweaks to lighten this meal up by using chicken instead of beef. I also reduced the sugar content of the sauce.

What do I Need to Make Mongolian Chicken Bowls?

While the full recipe instructions are available below, here is a breakdown of what you will need to make this easy recipe!

  • Chicken: This is an obvious one! You will need approximately one pound of chicken breasts. This is about two large chicken breasts. Cut the chicken into even sized cubes. You will want them to be bite-sized to make the meal easier to eat. Also make sure to season your chicken with salt and pepper. This is important, because it will give your chicken so much more flavor!
  • Onion and Broccoli: I find the perfect pairing for Mongolian beef is broccoli, so I did the same for my Mongolian chicken! Feel free to add other veggies that you want in here. Other options I would recommend include carrots, red or green peppers.
  • Sauce: The sauce it what makes this recipe so delicious! I made it as a marinade, which you can let the chicken soak in for one hour to overnight. The longer you marinate the chicken, the more flavorful and tender it will be. The ingredients you will need for the marinade includes brown sugar, cornstarch, soy sauce, oyster sauce, garlic, ginger, pepper, and water.

Ingredients

For the Marinade:

  • 1 tsp brown sugar, packed
  • 1/2 tsp cornstarch
  • 2 tbsp soy sauce
  • 2 garlic cloves, crushed
  • 2 tsp oyster sauce
  • 1/8 tsp ground black pepper
  • 1 tbsp water

For the Bowls

  • 1lb chicken breasts, diced into bite-size pieces
  • 1 tsp sesame oil
  • 4 cups broccoli florets, chopped (approx. 1 crown)
  • 1 cup white onion, diced (approx. 1 medium)
  • 1/4 cup water
  • 2 tsp green onion, sliced
  • 2 tsp sesame seeds, for serving

Instructions

  1. To make the marinade, mix all of the marinade ingredients above in a small bowl. Add the diced chicken to a resealable bag and pour the marinade over the chicken. Seal the bag and work the bag with the chicken so that all of the pieces of chicken are covered with the marinade. Refrigerate for one hour up to overnight before cooking.
  2. Heat a large non-stick skillet over medium-high heat. Add the sesame oil, broccoli and onions. Sauté until the broccoli starts to char and there is no moisture in the bottom of the pan, approximately 3 to 5 minutes. Add the water and let it bubble on the bottom of the pan. Before the water evaporates, reduce the heat and add the chicken. Do not save any of the leftover marinade. Cook the chicken until no longer pink in the center and juices run clear, approximately 5 to 7 minutes.
  3. Serve over rice and top with green onions and sesame seeds. Enjoy!
