These carrots roasted in the oven with ginger and garlic will make an excellent side dish to any meal you create. With few ingredients, simply toss, roast and serve!

With root vegetables being in season this Fall, carrots are an obvious choice of side dish!  The peppery but slightly sweet flavor in the ginger complements the caramelization of the roasted carrots perfectly.

Full recipe details are available below, but I will give some extra tips for you here.  To make these ginger roasted carrots, chop a large bunch of carrots into long pieces, approximately two inches long.  Next, you will halve the long slices of carrots lengthwise.  Now, you will add the olive oil, ground ginger, and ground garlic, salt and pepper.  You then want to toss the carrots thoroughly to make sure the oil and spices coat them evenly.  Finally, you will roast them in the oven.  Once they are out of the oven and cooled, season with chopped parsley for serving.

Ginger Roasted Carrots

Ingredients

  • 1 bunch carrots
  • 2 tsp olive oil
  • 1/2 tsp ground ginger
  • 1/4 tsp ground garlic
  • cracked salt and pepper, to taste
  • 1 tsp chopped cilantro, for serving

Instructions

  1. Preheat oven to 400F.
  2. Cut carrots in half lengthwise, and then into 2 inch long pieces and add to a medium mixing bowl.
  3. Add olive oil, ground ginger, ground garlic, and cracked salt and pepper.  Toss thoroughly.
  4. Spread evenly onto a roasting dish and roast in the oven for 30 to 40 minutes, tossing approximately every 10 minutes. Serve with chopped cilantro.
