To make these ginger roasted carrots, chop a large bunch of carrots into long pieces, approximately two inches long. Next, you will halve the long slices of carrots lengthwise. Now, you will add the olive oil, ground ginger, and ground garlic, salt and pepper. You then want to toss the carrots thoroughly to make sure the oil and spices coat them evenly. Finally, you will roast them in the oven. Once they are out of the oven and cooled, season with chopped parsley for serving.
