For those of you who grew up outside of Canada, Kraft Dinner - also known as KD - is a popular packaged macaroni and cheese meal.  I ate this fairly regularly growing up, and possibly even more often as I went to university.  It is a guilty pleasure of mine, so I developed a recipe to make it healthier!  

This dish closes my college week of recipes.  It also closes the list of unconventional comfort foods that my dad passed on from his days as a student.  My family loves to add canned salmon to our Kraft Dinner, and I did so in this recipe, but it is optional for you.  I recommend you try it at least once though!

Steps to Make the Best Grown Up Kraft Dinner

While the full recipe instructions are available below, here are some steps for you to consider when making this recipe.

  • Firstly, you will add the dry pasta to the pot along with just enough water to cover the noodles.  You will to bring the water to a boil with the pasta in it.  Check the pasta regularly.  You will move on to the next step when the pasta is cooked to a point before al dente.  Cooking the pasta this way saves you time and an extra pot to clean!
  • Next, you will add in the evaporated milk and stir it in.  No need for you to drain the pasta! If you would like to get the bright orange color that packaged Kraft Dinner has, then add 1/2 tsp of turmeric at this stage and stir it in.  This is optional and does not have a significant effect on the flavor of the meal.  Cook the pasta with the evaporated milk for a few minutes on high, to reduce the milk to a thicker consistency.
  • Now, you will mix in the grated cheese.  I recommend mixing it in stages.  This ensures that the cheese is fully combined into the pasta and sauce.
  • Finally, you can either serve the pasta as-is, or you will add the salmon at this stage.  If you want to add salmon, flake it with a fork and stir it into the pasta.  Scoop into individual bowls and serve!

Ingredients

  • 250g dry cavatappi noodles, approximately 3 + 1/2 cups
  • 170ml condensed milk, approximately 1/2 a can
  • optional: 1/2 tsp turmeric
  • 3 cups grated cheddar cheese
  • 1 can of sockeye salmon

Instructions

  1. Add the cavatappi noodles to a pot and add just enough water to cover the pasta.  Heat on the stove on high and bring to a boil.
  2. When the cavatappi is not quite cooked to al dente, approximately 5 to 8 minutes into cooking, add the condensed milk.  If want to achieve that bright orange color that Kraft Dinner has, add the turmeric at this stage.  Mix the condensed milk and turmeric into the pasta and continue to boil, allowing the milk to thicken into a sauce, approximately 3 minutes.
  3. Bring heat down to low and add the grated cheese in stages, mixing it in with the pasta until well incorporated.  Once all of the cheese has been added, remove from heat and either serve now, or continue to the last step.
  4. Optional: flake the salmon in the can and add to the pasta.  Mix it in to the pasta and serve.
