I love simple recipes that can also be easy meal prep lunches. The fresh ingredients come together to make the most vibrant tex mex flavors! These healthy chicken fajita bowls are a great and filling meal full of protein and healthy fats to keep you full for long!

Mexican food is a favorite in our house, and these bowls are no exception! They are a big hit with the whole family. This dish is essentially a deconstructed chicken fajita served over rice. Eliminating the tortillas help make this meal a little healthier with fewer carbs. The seasoning on the chicken is also out of this world. The mix of spices, cornstarch, and a little sugar make the chicken extra flavorful and juicy. It is truly the best part about this dish!

What Do I Need to Make Chicken Fajita Bowls?

While the full recipe details are available below, here is what you need!

  • Chicken breasts
  • Olive oil
  • Fajita seasoning - this includes a variety of spices outlined in the recipe below
  • Bell peppers - I use red and orange
  • Red onion
  • Garlic
  • Black beans
  • Corn
  • Fresh cilantro
  • Brown rice or white rice
  • Shredded cheddar cheese

Optional toppings include sour cream, lime wedge, romaine lettuce, pico de gallo, or avocado slices. Essentially anything you like on a regular fajita will be great in these bowls! With essentially no prep time, this is one of my favorite easy dinners.

How to Make Chicken Fajita Rice Bowls

While the full fajita bowl recipe details are available below, here are some tips to prepare this healthy dinner recipe.

  • Cook Rice: cook your rice according to the package instructions and set aside. Keep the lid on the rice to make sure it stays warm while you prepare the rest of your meal.
  • Cook Peppers: heat a nonstick large skillet over high heat. Once it is hot, place the peppers directly onto the pan without oil. Let the peppers sit without stirring for a few minutes so that they char on the edges. Stir occasionally, until the peppers start to soften a little. Remove from the pan and set aside, keeping the pan on the heat. For this recipe, you need to work quickly while cooking, so add the chicken to the pan right away!
  • Cook Chicken: while the peppers are cooking, whisk together the spices for the fajita seasoning in a small bowl. Cut the boneless skinless chicken breast into one inch cubes. Reduce the pan to medium heat. Toss the chicken with two thirds of the fajita seasoning and one tablespoon oil. Place chicken on the hot pan and let it sear on each side, stirring occasionally. The chicken will be fully cooked in about five to ten minutes. Cooking it this way will give you wonderfully juicy chicken. Once fully cooked, remove the chicken and set aside.
  • Cook Corn and Beans: spray a little more olive oil onto the pan and add the red onion. Cook, stirring occasionally, until the onion is softened and fragrant. Add the corn and black beans. Sprinkle the rest of the fajita seasoning over the corn and black beans and stir it together. Once it is cooked through, you're done!
  • Assemble: now for the fun part! Toss your favorite toppings over a bed of rice. Enjoy!

What Should I Do With Leftovers?

This is also one of my favorite meal prep recipes, because I can use the leftovers to make healthy lunches. You can assemble the full bowls to have the same meal for lunch the next day.

If you have extra beans and rice, I love cooking it in the skillet with eggs. It is a delicious way to use your leftovers for brunch! The eggs bring out the flavors of the meal and have a great texture. Eggs are one of my favorite ways to use up leftovers!

Ingredients

For the Fajita Seasoning:

  • 1 tbsp cornstarch
  • 2 tsp chili powder
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp granulated sugar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp cumin

For the Fajita Bowls:

  • 1 cup rice (dry)
  • 1lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 + 1/2 tbsp olive oil
  • 1 cup red bell pepper, sliced (approx. 1)
  • 1 cup orange bell pepper, sliced (approx. 1)
  • 1 cup red onion, diced (approx. 1)
  • 540ml black beans, drained and rinsed (1 can)
  • 1 cup frozen corn, thawed
  • 4 tbsp shredded cheddar cheese

Instructions

  1. Cook rice according to package instructions and set aside. Whisk together the fajita seasoning ingredients in a small bowl until well combined. In a medium bowl, stir together the chicken breast cubes, one tablespoon of olive oil, and two thirds of the fajita seasoning mix until the chicken is well and evenly coated. Set aside the remaining third of fajita seasoning.
  2. Heat a large non-stick skillet over medium-high heat. Once the pan is hot, add the red and orange pepper slices without any oil. Let them sit for 1-2 minutes, until starting to char. Stir occasionally for another 2-3 minutes, until the edges are slightly charred and the peppers are just starting to soften. Remove the peppers from the pan and set aside.
  3. Now add the chicken to the pan and let sear on each side, approximately 2-3 minutes per side. Stir only occasionally to allow the chicken to get seared. Once cooked through, remove the chicken from the pan and set aside. Reduce heat to medium low and add remaining half tablespoon of olive oil. Add the red onion and let cook, stirring occasionally until starting to soften, approximately 2-3 minutes. Add the corn and black beans and sprinkle with the remaining fajita seasoning. Stir to combine. Cook until the beans and corn are heated through, approximately 3 minutes, and remove from heat.
  4. Assemble your fajita bowls! In each bowl add the rice, charred peppers, seared chicken, black beans and corn, and 1 tablespoon of shredded cheddar. Add any of your other favorite toppings and enjoy!
