Every Christmas, my grandma would roast the most delicious carrots. They were tender yet crispy on the edges, and always perfectly caramelized.  While everyone in my family has tried to recreate these carrots, no one has succeeded in mastering them.  Although I haven't mastered her technique, these carrots come close to the ones she would make!

These are a perfect side dish to serve with your turkey dinner over the holidays.  The sweet caramelization of the carrots add the perfect flavor to your plate!  I also love the pop of color that they add on the table!

How to Make the Best Honey Garlic Roasted Carrots

While the full recipe instructions are available below, here are some tips to make the best roasted carrots for your turkey dinner!

  • Firstly, you want to use a bunch of carrots that still have the tops attached.  I am not sure if this is true, but I was always told that the carrots are more flavorful when the tops are kept on!  Use a pair of kitchen sheers to cut the tops of the carrots down to just before the carrot.
  • Next, you need to rinse and peel the carrots.  Do not cut the carrots.  This is important because the carrots need to be a uniform size so they cook at the same time.  
  • Place all of the carrots onto a parchment lined baking sheet.  Make sure they are close together so you can coat them with the olive oil and honey mixture.  We will spread them out after.
  • In a small bowl, whisk together the olive oil, honey, and garlic powder.  Pour the mixture over the carrots and toss with your hands or a pair of tongs to coat them.  
  • Finally, spread the carrots out on the baking sheet and cook in the oven, flipping them part way.  Keep an eye on your carrots after tossing them.  There is a fine line between perfectly caramelized and burnt carrots!

Ingredients

  • 6 whole small carrots, peeled and tops removed (approximately 1 bunch)
  • 1 tbsp olive oil
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • fresh thyme, for seasoning (optional)

Instructions

  1. Preheat oven to 450F.  Place carrots together on a parchment lined baking sheet.  In a small mixing bowl, whisk together the olive oil, honey, and garlic powder.  Pour the mixture over the carrots and toss until well coated.
  2. Roast in the oven for approximately 30 minutes.  Flip the carrots at approximately 15 minutes.  Keep an eye on them after flipping to ensure your carrots don’t burn!
