I learned to make this dish from Julian's mom.  It uses plenty of fresh vegetables, Portuguese chouriço, and rice and is prepared in one pot.  This makes it a great weeknight meal when you want to get dinner on the table quick.  It is also delicious and healthy thanks to all of the vegetables and the chouriço.  This meal is the epitome of a kid tested, mother approved dinner!

How to Make the Best Portuguese Chouriço and Rice Bowls

While the full recipe details are available below, here are some tips for you to make the best chouriço rice bowls tonight.

  • Chouriço: Portuguese chouriço is similar, but distinct from Spanish chorizo.  While both types of sausage originate from the same general region and have similar flavor profiles.  Portuguese chouriço tends to have a stronger flavor, but is less spicy than the Spanish variety.
  • Vegetables: this meal includes onions, peppers, carrots, and beans.  This is great because it makes for a healthy meal!  While I prefer to use red kidney beans, you can also use black beans as a substitute in this recipe.
  • Rice: I generally prefer to use brown rice in my cooking.  However, you can use either brown or white rice for this recipe.  The brown rice will take longer to cook.  It will also require more water to let it cook in the pot.  
  • Cheese: although this is an optional ingredient, I recommend shredding marbled cheddar cheese over your bowl.  It adds to the delicious flavors of the chouriço, rice and veggies.  Adding cheese to the meal also makes this dish a hit with kids!

This meal is extremely easy to make and uses only one pot, which makes dishes a breeze.  It also uses plenty of vegetables which makes it a healthy family meal.  Adding a little bit of cheese on top makes it super tasty and ensures even the pickiest of eaters will enjoy this dish!

Ingredients

  • 1 tsp olive oil
  • 1 + 1/3 cups onion, diced (approximately 2/3 medium onion)
  • 1 cup red pepper, diced (approximately 3/4 large pepper)
  • 1 + 1/2 cups sliced carrots (approximately 4 skinny carrots)
  • 1 large chouriço sausage, sliced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 can red kidney beans (400ml) rinsed and drained
  • 2 cups water (2 + 1/2 cups for brown rice)
  • 1/4 tsp Tabasco sauce (or more, to taste)
  • 1 cup rice
  • 6 tbsp shredded marbled cheese

Instructions

  1. Heat a large pot on medium high heat.  Add olive oil and onions.  Cook until the onions start to brown at the ends, approximately 5 minutes.
  2. Add pepper and cook another 3 minutes, until the pepper is softening.  Add carrots and cook for another 2 minutes.
  3. Add chorizo and cook until it is starting to crisp, approximately 5 minutes.
  4. Add the frozen peas and corn and cook until the corn and peas are starting to brown on the ends, approximately 3 minutes. Add a little bit of salt to the pot.
  5. Add water and bring to a simmer.  Add the kidney beans and Tabasco sauce.  Taste the broth to see if it is a little salty.  Cover and bring to a rolling boil.
  6. Add the rice.  Cover, reduce heat and cook for 20 minutes (longer for brown rice).
  7. Once the rice has been cooked through, scoop into bowls.  Add shredded cheese on top and serve.
