I used to hate the taste of beets when I was younger.  However, now that I make beets using this method, I love them!  This method is also extremely simple.  Just toss the beets in olive oil and roast in the oven.  Once the beets are fully cooked, transfer them to a small dish and top with feta.  While I generally prefer to use goat's cheese feta in my cooking, regular feta will work great in this recipe too!

How to Make the Perfect Roasted Beets with Feta

While the full recipe instructions are available below, here are some tips to make the best roasted beets!

  • Preheat Oven: the key to perfectly roasted vegetables is to use high heat.  Be sure to give the oven plenty of time to fully preheat before putting your beets in the oven.  This is also important because it will ensure the beets will roast evenly and quicker.  
  • Baking Sheet: line your baking sheet with parchment paper.  This is important because it will protect your baking sheet and will speed up cleanup time.  You also need to spread your beet slices evenly on the baking sheet.  This is important because it will allow the beets to roast properly.  If the beets are touching, they will not crisp at the edges and will simply steam, which is not the desired effect!
  • Purple Coloring: be careful!  Beets have a strong purple color to them, which stains easily.  Be sure to wear an apron or a shirt that you are not worried about getting stained when you prepare this dish!

Ingredients

  • 1 tbsp olive oil
  • 5 beets, peeled and sliced into 1/2 inch cubes
  • 3 garlic cloves, whole
  • salt and pepper, to taste
  • 1 tbsp goat cheese feta (regular feta works well for this too)

Instructions

  1. Preheat oven to 425F.  In a large mixing bowl, toss together the olive oil, beets, garlic, salt and pepper.  Spread evenly on a parchment lined baking sheet, ensuring the slices are not touching.
  2. Roast for 30 to 45 minutes, tossing every 10 to 15 minutes.
  3. Once the beets are roasted to be crisp on the edges and fork tender, add them to a small dish and crumble the goat’s feta cheese on top. Serve.
