Keeping with the theme of easy healthy meals this January, I have made this slow cooker beef stew.  I love slow cooker recipes for multiple reasons.  One reason I love to use my crockpot is that the recipes are typically low fuss.  I simply add the ingredients into the slow cooker, stir and set my timer and then come back four to eight hours later for dinner.  This recipe is definitely low fuss!

I also love using my slow cooker because there is generally very few dishes to clean up.  Aside from the crockpot itself, this recipe also uses minimal dishes.  You will also be finished with the dishes when you start the slow cooking process.  Therefore, any dishes you dirty will already be clean by dinner time!

Simply wake up 15 minutes early to put your ingredients into your crockpot and you will come home to an amazing meal at the end of the day!  If you do not have one, I highly recommend you get a crockpot.  I believe it is an essential kitchen appliance to have.  The simplicity of most slow cooker meals also make these recipes ideal for any new chef!

How to Make Slow Cooker Beef Stew

While the full recipe instructions are available below, here are some tips to make a great crockpot stew for dinner tonight.

  • First, you want to be sure to sear the meat before adding it to the crockpot.  If you do not have time to do this, it is fine.  However, taking the time for this step will add a lot of flavor to your meal.
  • Once you have added all of your ingredients, you will set your cooking time and intensity.  I recommend opting for the lower intensity and longer cooking time.  This will result in the best flavor and texture for your meal.
  • Finally, to achieve the thicker texture of stew without adding heavy cream or flour, you will add a small amount of cornstarch mixed with water.  You will do this about one to two hours before the stew is finished cooking.  This is important, because it will help to thicken your stew while keeping it gluten and dairy free!

Ingredients

  • 1 lb stewing beef, cut into 1/2 inch pieces
  • 1 tsp olive oil
  • 1 lb baby potatoes, quartered
  • 1 + 1/2 cup carrots, peeled and sliced (approx. 1 small bunch)
  • 1 + 1/2 cup celery, sliced (approx. 3 large stalks)
  • 1 + 1/2 cup onion, sliced (approx. 1 large)
  • 4 cloves garlic, crushed
  • 3 cups low sodium beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary, chopped
  • 1 tsp paprika
  • 2 bay leaves
  • 1 cup frozen peas
  • 1 + 1/2 tbsp cornstarch

Instructions

  1. Heat a large non-stick skillet on medium.  Add the oil and beef and brown on all sides, approximately 3 to 4 minutes.
  2. Add all ingredients except the peas and cornstarch to the crockpot.  Cook for 7 to 8 hours on low or 3 to 4 hours on high.
  3. In the last 20 to 30 minutes of cooking time, whisk the cornstarch with approximately 2 tbsp of cold water.  Add the cornstarch mixture and peas to the crockpot and stir in.  If cooking on low, turn to high for the last 20 to 30 minutes of cooking.
