This Fall I am all about making cozy soups.  They are my favorite meals to make when the weather is colder, and they are easy to make healthy!  I also love to make meals using my slow cooker at this time of year.  It is so convenient to throw all of the ingredients in the crock pot before work and having dinner ready when you get home!  

This pea soup is all of those things combined.  It uses minimal ingredients, which make it quick and easy to put together in the crock pot before work.  The ingredients are also healthy and satisfying.  There is a small amount of bacon which gives this soup a deep flavor.  The peas are filling and make this a hearty meal.

How to Make the Best Slow Cooker Split Pea Soup

All you need to do is wake up 15 minutes early for work and you will have the best pea soup waiting for you when you get home.  While the full recipe instructions are available below, here are some tips to make the best pea soup in the slow cooker!

  • Vegetable Preparation: to make this soup even faster to throw together in the morning, I recommend slicing the carrots and onions the night before.  Since the carrots and onions are going into a soup, I recommend slicing them into small, bite sized pieces.
  • Pre-measure Ingredients: making sure to pre-measure your ingredients the night before also helps to speed things up in the morning.  When I plan to make this soup, I often measure the peas and add them to the crockpot the night before.  I also measure the amount of chicken broth that I will be using and store it in the fridge overnight.  This is a great approach because it saves precious minutes in the morning!

Ingredients

  • 3 strips bacon, sliced into small pieces
  • 1 yellow onion, diced
  • 3 cloves garlic, crushed
  • 2 cups dry split peas
  • 2 cups carrots, sliced
  • 5 cups chicken broth

Instructions

  1. Heat a non-stick skillet on medium.  Once the pan is hot, add the sliced bacon strips and cook until crispy.  Add the onion and garlic and cook until soft, approximately 2-3 minutes.
  2. Add the contents of the skillet and the rest of the ingredients to the crockpot.  Cook on low for 10 hours.
  3. Once the crockpot is finished, stir the soup and season with salt and pepper to taste.
