With the hot August weather, I love to make salads for meals or sides.  This salad uses fresh local ingredients and is the perfect side to any protein you cook.  You can even toss your protein of choice into the salad to make it a meal.

How to Make the Best Strawberry Spinach Salad

While the full recipe instructions are available below, here are some tips for you to make the best salad:

  • Dressing: the dressing for this salad is simple and uses olive oil, balsamic vinegar, and lemon juice.  Since there are few ingredients to make this dressing, it is important for you to use fresh lemon juice.  The fresh juice will give the dressing more flavor than the bottled juice.
  • Red Onions: you want to slice the red onion into long strips.  Then, you want to let the red onion slices to sit in the balsamic vinegar for up to 5 minutes before adding other ingredients to the dressing.  This is important because it calms the flavor of the red onion.  This will help keep the flavor of the onion from overpowering the salad.

Be careful and ensure you only use safe red onions that you know the origins of to avoid the current salmonella outbreak.

Ingredients

  • 2 tsp balsamic vinegar
  • 1/3 of a red onion, sliced lengthwise
  • 4 cups baby spinach, rinsed and stems removed
  • 2 cups red leaf lettuce, chopped
  • 10 strawberries, chopped into small pieces
  • 2 tbsp goat cheese, crumbled
  • 1/2 cup pecans, halved
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • salt and pepper, to taste

Instructions

  1. In a small mixing bowl, pour balsamic vinegar over sliced red onion and mix to ensure all onion slices are coated with the vinegar.  Let sit for approximately 5 minutes.
  2. In a large salad bowl, add baby spinach, red leaf lettuce, strawberries, goat cheese, and pecans.
  3. Add the lemon juice, olive oil, and salt and pepper to the small mixing bowl with the balsamic vinegar and onions.  mix together to form a consistent dressing.  Pour over the contents of the salad bowl.
  4. Toss the salad and serve.
