I have created a new kind of cookie, and it is extremely addicting. These Peanut Butter Sugar Cookies are the best for the holidays! The cookies are a perfect combination of light and fluffy sugar cookies and soft and chewy peanut butter cookies. You will be hooked once you try them too!

I was looking for inspiration for a new cookie to bake over the holidays and could not decide between sugar cookies and peanut butter cookies. The result is this amazing combination between the two cookies - the best of both worlds!

What is a Peanut Butter Sugar Cookie?

This is a cross between a fluffy and firm sugar cookie, and soft and tender easy peanut butter cookies. These cookies are characteristic of sugar cookies because they include much flour and sugar, but they also include peanut butter which makes these nice and soft in the center of the cookies. This is the best recipe for a twist on two of my favorite classic cookies, and I am sure you will agree!

What Do I Need to Bake the Best Peanut Butter Sugar Cookies?

While the full ingredient list is available in the recipe card below, here is a breakdown of what you will need to bake this twist on classic peanut butter cookies! I love that these are so delicious and use such simple ingredients for easy cookie recipes.

  • All purpose flour
  • Baking soda
  • Kosher salt
  • Unsalted butter, at room temperature
  • Granulated sugar
  • Brown sugar
  • Natural peanut butter
  • Pure vanilla extract
  • Large egg, at room temperature

You could also use some chocolate chips to melt over the tops of your cookies if you would like!

Tips to Bake Peanut Butter Sugar Cookies

Here are some tips for you to prepare the most amazing soft peanut butter cookies with a twist!

  • The first thing we will do is lightly cream our butter in a large mixing bowl with a handheld electric mixer or in the bowl of a stand mixer with the paddle attachment. Add the sugars and beat until well combined and fluffy. Next, add your creamy peanut butter, vanilla and egg and beat until well combined. This will take approximately three to five minutes.
  • While the wet ingredients are mixing, you will mix together your dry ingredients. Whisk together the flour, baking soda, and salt in a large bowl until well combined. Slowly add the flour mixture to the wet ingredients and mix until just combined. The dough will look crumbly, don't worry this is what we are looking for!
  • Roll your dough on a floured sheet of parchment paper to about a quarter to half inch thick. Chill the dough for at least one to two hours in the fridge or up to two days in an airtight container. Once your dough is chilled, cut the cookies out with your favorite festive cookie cutter and transfer cookies to your prepared baking sheets with parchment on it. Shape dough on the cookie sheet if needed. One tip is to bake your cookies in batches of the same shape. This will ensure they all bake at the same time and you won't end up with some cookies being over baked and others under baked on the same cookie sheet.
  • Pre heat oven to 350 degrees F. Bake cookies for eight to ten minutes, until the cookies are set and the edges start to turn golden. Let cool for approximately ten minutes before transferring the warm cookies to a cooling rack. If you wish, you can drizzle melted chocolate over the cookies on the wire rack at this point. Once your cookies have fully cooled, enjoy!
