At this time of year, I am all about light meals that you don't have to spend lots of time cooking over the stove. It is just too hot out! I also like to prepare my meals in advance so I can spend more hot summer days out and about enjoying the wonderful weather. This easy chicken salad recipe with Greek yogurt is one of my favorite ways to meal prep lunches at the beginning of the week. It is quick and easy to prepare, is a healthy and great option for a weight loss meal, and is delicious too!

What Are the Main Ingredients in Chicken Salad?

As the name suggests, the main ingredient in this recipe is cooked chicken. I love to use leftover rotisserie chicken in this meal.

The other main ingredient in this low carb chicken salad is Greek yogurt. This is the secret to what makes this recipe healthy without skimping on flavor! Typical chicken salads use a lot of mayonnaise in them, which adds a lot of unnecessary calories. Honestly, I find it makes it not taste as good either! The Greek yogurt lets us cut way down on the amount of mayonnaise we use in this meal, so it is much healthier but still has that great flavor we love!

Another key ingredient in this salad is a bit unexpected - curry powder. I honestly debated whether to name this recipe curry chicken salad instead! Using fresh herbs and a dash of curry powder give this delicious chicken salad a very unique flavor that you are going to absolutely love.

My Simple Trick for Making Shredded Chicken Breasts

Usually, I can't be bothered to pre-cook my chicken breasts for this recipe - I buy pre-prepared plain cooked rotisserie chicken breast from the grocery store and shred them myself. They are just as healthy and take way less time for you to prepare!

If I do get ambitious and decide to prepare my own cooked chicken breast, I will simply season with salt and pepper and cook it in the oven at 350F for approximately 20-30 minute. Once cooked through to an internal temperature of 165F, I place the chicken in my stand mixer with the paddle attachment and mix it on medium/low speed for up to 30 seconds. This results in perfectly shredded chicken with almost no effort!

How to Make Chicken Salad

In a large bowl, whisk together your Greek yogurt, half fat mayonnaise, and Dijon mustard until well combined. Add all of your remaining ingredients into the bowl and fold together until well mixed and all ingredients are coated in the Greek yogurt mixture. Take a taste and stir in any salt and pepper as needed, to taste. Top with some additional green onion and cilantro and enjoy!

There are a few ways I love to enjoy this meal. The best way to enjoy these as a lettuce wrap or on a slice of bread as an open faced sandwich. I even love this recipe without any accompaniments if I'm feeling lazy!

How to Store Leftovers/Preparing in Advance

One of the best things about this recipe is that it keeps so well in the fridge. Simply store in an airtight container. I love these bowls, because you can mix your salad directly in the bowl and then seal it with the lid it comes with and pop it right in the fridge. That is efficiency at its best!

  • Can I use Greek yogurt instead of mayo? Absolutely! Using Greek yogurt helps to reduce the amount of mayo you need to use in this recipe, which cuts down on calories.
  • Is Greek yogurt better than mayo? I do not want to say one is better than the other. While mayonnaise might be tastier than plain yogurt, Greek yogurt is much healthier than mayonnaise since it is lower in calories and high in protein and low in fat and added sugars.
