Avocado Sweet Potato Toast

I love a good avocado toast that uses a slice of perfectly crisped sourdough or rye bread.  However, I sometimes prefer an option with lower carbohydrates.  That's where this substitution of sweet potato (or yams) in place of toast comes in!

You can use either sweet potatoes or yams in this recipe - I have photographed using a yam.  Slicing the sweet potato thinly allows you to toast it to the perfect point.  The toaster gets the slice to a soft and tender consistency, but still has a char and crispiness to the outside of it!  While I find this recipe filling on its own, you can make it even heartier by adding a perfect poached egg on top.

The Key to a Great Topping for Your Avocado Sweet Potato Toast

While the full ingredients list is available below, here are some tips for making the best avocado topping every time:

  • Seasoning Salt: the secret ingredient to my avocado topping is Hy's seasoning salt.  It adds the perfect perfect blend of spices and salt to your topping!  It is important for you to use it sparingly however, since it has a strong salty taste.  I recommending adding a small amount at a time, and taste testing to make sure you don't overdo it!
  • Olive Oil: add a little bit of olive oil to the mixture. This helps to create an optimal texture and to combine the ingredients in the topping.
  • Lemon Juice: adding a small amount of lemon juice to the avocado topping is important because it adds some acidity and zest to the dish.
  • Mayonnaise: I recommend adding a small amount of light mayonnaise to give the topping a creamy flavor.  A lot goes a long way though, so use sparingly!

Prep Time:
Cooking Time:

  • 2 slices of sweet potato or yam, approximately 1/4 inch thick
  • 1/2 avocado
  • 1/8 tsp Hy’s seasoning salt (or more, to taste)
  • 1/2 tsp olive oil
  • 1/2 tsp light mayonnaise
  • 1/4 tsp lemon juice

  1. Pop the sliced sweet potato into the toaster on medium.  You may need to pop the slices back in to the toaster once or twice.  Keep an eye on them to make sure they don’t burn.  When they are done, they should be crispy on the outside, but the flesh on the inside should be tender and easily pierced with a fork.
  2. In a small mixing bowl, combine the avocado, Hy’s seasoning salt, olive oil, light mayonnaise, and lemon juice.  Mix to combine and lightly mash the avocado.
  3. Once the sweet potato slices have been toasted, top with the avocado mixture and serve.
