Looking for a fun breakfast to make this weekend that is quick, easy, healthy, and the whole family will love? Look no further than these Easy New Mexico Style Huevos Rancheros!

This is one of my favorite ways to switch up breakfast or brunch on the weekend. Eggs are one of my favorite breakfast foods - I could literally eat them for breakfast every day!

What are Huevos Rancheros?

Traditional huevos rancheros is a breakfast dish that is served in a style typical of morning meals served on Mexican farms. As the name suggests, it translates to "rancher's eggs". It is typically served including corn tortillas, a fried egg, and is topped with warmed salsa.

What Makes New Mexican Huevos Rancheros Special?

The New Mexican style of this classic has a bit of a twist. They can be served with either corn or flour tortillas and include the typical fried egg. However, it also has refried beans and is topped with green onions or fresh cilantro, and shredded cheddar cheese. There is also lots of red chile sauce in place of salsa on this dish.

New Mexico red chile sauce is also referred to as enchilada sauce. It is a deliciously vibrant sauce that gets its color from the red chiles which are a main ingredient. It has a mildly spicy flavor and is used as a basis for many Mexican and New Mexican dishes.

What Do I Need to Prepare New Mexican Huevos Rancheros?

  • Refried beans
  • Avocado or olive oil spray
  • Large eggs
  • Red chile sauce
  • Shredded Tex Mex light cheese

Other toppings I love to use include cotija cheese if you can find it, sour cream, or lime juice! You could also switch things up and use green chile sauce, which is the same as green enchilada sauce.

How to Prepare the Best Huevos Rancheros

While the full recipe instructions are available below, here are some tips to make the best New Mexico Huevos Rancheros!

You are going to have a lot going on at once on the stove, so I recommend you have all of your ingredients prepared before you start cooking so you can work quickly. The fancy French word for this is mise en place which means "putting in place". Now you can impress your friends and family with this tidbit!

  • Heat a saucepan over low heat and add your red chile sauce to warm it, stirring occasionally. Add a can of refried beans to another saucepan and heat over medium heat and stir occasionally as it warms. Next, heat a large skillet over medium-high heat and add a little oil to the hot pan. Once pan has been heated, add your eggs to the hot oil and cook them sunny side up.
  • While your eggs cook, heat your tortilla over an element on the stove on low heat or microwave them so they are more pliable. Once all of your elements are ready, place your warm tortillas on the plate. Spread with the hot refried beans, then the fried eggs, then the red chile sauce, shredded cheese, and chopped cilantro. Serve immediately and enjoy!

One of my favorite things about this recipe for easy eggs is the runny yolks and how they combine with the sauce and beans to create an amazing flavor combination. This easy huevos rancheros recipe is one of my favorite Mexican breakfasts for how simple and delicious it is, but also for how easily you can add variations to it for amazing flavor. Instead of using refried beans, you could use warm pinto beans. You could also substitute the red chile sauce for ranchero sauce for a slightly different flavor. I also love adding lettuce or another leafy green to the meal. The flavors of this meal blend with the runny egg yolk which always makes everything taste amazing! You truly cannot go wrong with any of these substitutions.
