This is one of my favorite breakfasts, because it takes me back to the first Summer that Julian and I were dating. It was probably the best Summer I have ever had! Julian would always make this amazing brunch with the stash of Portuguese chouriço he kept in his freezer.

It was always simple. There would be sliced chouriço, eggs, a little bit of whichever cheese he had on hand, and any veggies that were available.  It didn't really matter what extras he put into our brunch, it always tasted amazing.

I had not been introduced to Portuguese chouriço before I met Julian, and I have to admit, it tastes amazing! However, if you cannot find Portuguese chouriço, you can use Spanish chorizo or sliced bacon as an alternative in this recipe.

We somehow went a long time without having this meal, and I made it for us last weekend and it was perfect. I love to make this breakfast now because it brings back all of those great memories from that great summer.

How to Make the Best Portuguese Chouriço Breakfast Hash

While the full recipe instructions are available below, here are some tips to make this incredibly simple brunch.

  • First, you will slice your chouriço. I generally prefer to slice it into rounds and then quarter the rounds for this recipe. While you can slice the chouriço however you would like, it is important that the slices are even.  This is important, because the pieces will cook at the same rate.
  • Next, add the chouriço to a non-stick skillet and sauté it over medium-high heat. You want to cook the chouriço until it is starting to get crispy.
  • Now, reduce the heat to medium-low. Add the eggs to the skillet and break them apart with a wooden spoon as they cook. This is called a country style scramble and it is delicious!
  • Finally, add the cheese when the eggs are almost fully cooked. Stir all of the ingredients in the skillet to combine. Serve with chopped green onion or chives and enjoy!

While I love this recipe for its sentimental meaning, it is also a delicious and simple breakfast to have on a game day. Enjoy this for your Super Bowl Sunday brunch!

Ingredients

  • 1 tsp olive oil
  • 5 oz Portuguese chouriço (1 link), you can substitute with other sausage, Spanish chorizo, or bacon
  • 4 eggs
  • 1/4 cup havarti cheese, shredded, plus more for serving
  • 1 tsp green onion, sliced, for serving

Instructions

  1. Heat a non-stick skillet over medium-high heat. Add the olive oil and chouriço and sauté until it starts to crisp on the edges, approximately 2 to 3 minutes.
  2. Reduce heat to medium-low and add the eggs. Stir and break the eggs apart as they cook. Once the eggs are almost cooked through, add the shredded havarti and stir until the cheese is melted and the eggs are set.
  3. Serve on plates and top with extra shredded cheese and sliced green onions.
