Like many people, I am going into the new year with intentions of focusing on my health.  2020 was a crazy year, and nutrition was not always a focus of mine.  This was especially true with the decadence of the holidays.  I think was true for many people in the past year.  Therefore, I am sharing my first recipe of 2021 with this in mind.  These breakfast wraps are delicious and will help you start your day off with a healthy meal!

These wraps are somewhat of a knockoff of the spinach feta wraps at Starbucks.  They are always a treat when I order them on my Starbucks runs.  Now that I am working from home, my trips to Starbucks are much fewer.  Therefore, I decided to bring these treats home!

How to Make Spinach and Feta Breakfast Wraps

While the full recipe instructions are available below, here are some tips to make the best quick and healthy breakfast!

  • Firstly, we will sauté the shallots until they are softened.  Then, we will add the spinach and sauté until it has softened and reduced.  This is important to do before adding the eggs, because the eggs will cook very quickly.
  • Next, we will beat the eggs and add them to the skillet.  We will also add the feta cheese to the skillet quickly after adding the eggs to ensure it is well incorporated.  I generally prefer to use feta that is made from goat's milk because it is easier for me to digest.  If you prefer to use regular feta, go for it!
  • Finally, we will scoop the cooked egg mixture onto the whole wheat wraps and enjoy!

Ingredients

  • 1 tsp olive oil
  • 1/2 cup shallot, sliced (approx. 1 medium)
  • 3 cups fresh spinach, sliced (approx. 1 small bunch)
  • 6 eggs, beaten
  • 2 tbsp goat feta cheese
  • 6 whole wheat wraps (small or medium size)

Instructions

  1. Heat a non-stick skillet on medium.  Add oil and shallots, sauté until softened, approximately 2 to 3 minutes.  Add spinach and sauté until softened and reduced, approximately 2 minutes.
  2. Add eggs and feta to the skillet, stirring constantly until the eggs are fully cooked – approximately 3 minutes.  
  3. Spread evenly onto wraps, roll up and enjoy!
