Frittatas are one of my favorite breakfasts. They are a delicious way to incorporate so many healthy ingredients into the start of your day! It is also a great way to sneak veggies in for pickier eaters.

I used chicken pesto sausages for a pasta dish and had some leftover, so I made this frittata in the morning. It was awesome! The combination of the chicken sausage, eggs, egg whites, Havarti, mushrooms, and broccolini is out of this addicting. I think Julian and I kept going back for seconds - it did not last as long as I had planned it to!

How to Make this Easy Chicken Sausage Frittata

While the full recipe instructions are available below, here are some tips to make this delicious and versatile breakfast.

  • First, remove the chicken sausages from their casing and sauté them. Break the sausage part with the end of a wooden spoon as it cooks. Once the chicken is almost cooked through, add the onion, mushrooms, and broccolini. Continue to sauté until the onions and broccolini have softened, and the moisture from the mushrooms evaporates. This is important, because too much moisture will ruin the texture of the frittata.
  • While the chicken and veggies are cooking, we will prepare the eggs. Beat the eggs, cheese, dried parsley, and salt and pepper together. Make sure that the chicken sausage and veggies are in an even layer in the skillet. This is important, because it determines how evenly the filling will be distributed in the frittata. Now, pour the egg mixture over the skillet. Do not stir the eggs, and let the mixture cook until the edges start to set.
  • Now, move the skillet to the oven and cook until the frittata is set in the middle. Let the frittata cool, and cut into slices. Enjoy!

Ingredients

  • 1 tsp olive oil
  • 7oz chicken sausages, casings removed (approx. 2 links)
  • 3/4 cup onion, diced (approx. 1 small)
  • 1 + 1/2 cups mushrooms, sliced
  • 1 cup broccolini, sliced
  • 5 whole eggs
  • 4 egg whites
  • 1/4 cup Havarti cheese, shredded
  • 1/2 tsp dried parsley
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 400F. Heat a large non-stick oven safe skillet on medium heat. Add the oil and chicken sausage. Break the chicken sausage up with the end of a wooden spoon as it cooks, approximately 2 minutes. Add the onion, mushrooms, and broccolini. Sauté until the onions and broccolini have softened, and the moisture from the mushrooms has evaporated, approximately 4 to 5 minutes.
  2. While the chicken sausage and veggies are cooking, beat together the eggs, egg whites, Havarti, dried parsley, and salt and pepper in a large mixing bowl until well combined and the eggs start to bubble. Once the chicken sausage is cooked through and the veggies are ready, spread them evenly on the skillet. Pour the egg mixture in an even layer on the skillet and cook, without disturbing it, until the edges start to set, approximately 2 minutes.
  3. Once the edges of the frittata have set, transfer the skillet to the oven and bake until the frittata is cooked through and the center is set, approximately 15 to 18 minutes.
