It is my little sister's birthday today, and her favorite breakfast is eggs benedict.  So to honor her big day, I made this healthier take on this brunch classic! This recipe also honors my sister's favorite line. Get lost in the sauce.  This recipe is all about the sauce!

I have lightened up this hollandaise sauce by using egg yolks, plain yogurt, lemon juice, and Dijon mustard!  There is also a little bit of Cajun spice mix in there to add a little zing to it.  Honestly, this sauce tastes amazing!  I highly recommend you try it for your next weekend brunch.  It would also be perfect for a work from home lunch.  Heck, I have even had this for dinner - I don't judge.

How to Make the Best Healthy Eggs Benedict

While the full recipe instructions are available below, here are some tips to make the best healthy brunch.

  • It is very important that you use plain, non-fat regular yogurt.  Do not use Greek yogurt.  This is important because the type of yogurt that you use will have a big impact on the texture and flavor of your sauce.  Greek yogurt is too thick for this recipe.
  • When you are heating your egg yolks, lemon juice, and yogurt together, you need to whisk the mixture constantly.  This is important because it will prevent your sauce from getting lumps in it.
  • Follow my method for the perfect poached egg to prepare the eggs to place on the English muffins.  This method works every time!
  • To keep this recipe healthy, I used whole wheat English muffins and spinach as a base.  Feel free to use whichever type of bread and toppings you would like.  Peameal ham or strips of bacon are always delicious additions.

Ingredients

For the Healthy Hollandaise:

  • 3 egg yolks
  • 1 cup non-fat plain yogurt (not Greek)
  • 1 tsp lemon juice
  • 1/2 tsp Dijon mustard
  • 1/4 tsp Cajun seasoning (optional)
  • salt and pepper, to taste

To Assemble:

  • 2 whole wheat English muffins, toasted
  • 4 eggs, poached
  • 1/2 cup baby spinach leaves, stems removed
  • 1/2 tsp fresh parsley, chopped, optional for garnish

Instructions

To Make the Healthy Hollandaise:

  1. Bring a pot of water to a boil and place a strainer over the pot and place a medium sized mixing bowl in the strainer.  Add the egg yolks, yogurt, and lemon juice to the mixing bowl and whisk together constantly, until it starts to thicken – approximately 10 to 12 minutes.
  2. Remove from heat and add the Dijon mustard and Cajun seasoning and whisk together.  Add salt and pepper to taste.  Keep warm until the sauce is needed.

To Assemble:

  1. Place the toasted English muffins on each plate.  Add the spinach leaves on top and add a small spoonful of sauce on top of the spinach.  Top with a poached egg on each and spoon the hollandaise sauce over each egg and sprinkle with fresh parsley.  There will likely be some sauce leftover.
