With the phased reopening progressing here in Vancouver, I am going to my office more and more.  That means I need to be a little more organized with my meal planning since I can no longer open my fridge and prepare a quick and healthy meal from scratch midday.  These mixed berry overnight oats are the perfect solution for this!

They take minimal time to prepare, and can be done for the whole work week in one sitting!  I also love how versatile this recipe is.  You can add whichever berries you have on hand and are in season!

How to Make the Best Overnight Oats

While the full recipe is available for you below, I have left some helpful tips for you here:

  • Berries: I generally prefer to use fresh berries, but you can use the frozen variety as well.  I normally opt for raspberries, strawberries, or blackberries.  Choose your favorite berries and add them in!
  • Oats:  steel cut or rolled oats will work just fine in this recipe.  To ensure they are gluten free, I recommend making sure you check the labels.  I generally use Quaker's gluten free rolled oats for this meal.
  • Milk: although I have used oat milk in the recipe below, you can use whichever milk you prefer.  I like my overnight oats to be a little bit soupy, so have recommended 1/2 cup of oat milk below.  If you prefer your oats to be thicker, then reduce the amount of milk to about 1/3 cup. It is important that you use the type and amount of milk that you like, since it is one of the main ingredients in this meal!
  • Seeds: even though I have used flax seeds in the recipe below, you can substitute them for chia or some other type of small seed that you prefer.

As you can see, there are many different combinations you can make with this recipe.  Try a different iteration each time!

Ingredients

  • 1/4 cup rolled oats
  • 1/2 cup oat milk
  • 1 tsp flax seeds
  • 1/2 cup berries of your choice (if using strawberries, I recommend cutting into quarters)
  • 1 tsp honey (or other sweetener of your choice)
  • dash of cinnamon
  • 1 tsp shaved almonds.

Instructions

  1. Combine all ingredients in a mason jar or other type of airtight container.
  2. Close lid and shake vigorously, approximately 20 seconds.
  3. Refrigerate overnight.
  4. In the morning open container and top with shaved almonds.  Serve.
