While Julian and I will be having a much smaller New Year's Eve celebration this year, we still want to make it feel special.  We will be ringing in the new year at home.  However, we will still dress up and make some fancy snack and cocktails to make it feel like a special event!

These little bites I made are the perfect fancy snack to have while celebrating the end of a crazy year!  They have the perfect blend of caramelized shallots, goat cheese, mushrooms, and prosciutto.  I find it dangerously easy to eat way too many of these!

How to Make Amazing Prosciutto and Mushroom Bites

While the full recipe details are available below, here are some tips to make the best puff pastry bites for your NYE celebration!

  • First, you will need to prepare your puff pastry.  To save time with this recipe, I use store bought puff pastry.  Make sure you give it enough time to thaw in the fridge so that you can roll it out.  I recommend letting it thaw overnight in the fridge at a minimum.  Most packages provide instructions for thawing to make this easier.
  • Once you have rolled out your puff pastry, cut it into large rounds.  They should be large enough to cover the recesses of a muffin tin.  Place the rounds over a greased muffin tin and push down to form cups.  Bake for 10 minutes before adding your fillings.
  • Now, you will add your fillings to the cups before putting them back in the oven.  I recommend using caramelized shallots, finely chopped mushrooms, prosciutto, and goat cheese!  Bake until the pastry starts to turn golden and the goat cheese softens.  Serve on a platter and enjoy!

Ingredients

  • 400g (1 package) frozen puff pastry, thawed
  • 1 tbsp salted butter
  • 1 tbsp olive oil
  • 3 shallots, sliced
  • 1/8 tsp salt
  • 1 tbsp dry white wine (I used pinot gris)
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh rosemary, chopped
  • 6 slices prosciutto, broken into small pieces
  • 2/3 cup brown button mushrooms, chopped finely
  • 12 tbsp goat cheese
  • 1 tsp honey

Instructions

  1. Preheat oven to 400F.  Spray a muffin tin with non-stick spray and set aside.  Roll the puff pastry into 1/4 inch thick layer and cut into circles.  Place puff pastry circles in the muffin tin to create cups.  Bake for 10 minutes.
  2. While the pastry is baking, heat a non-stick skillet on medium.  Add butter and oil.  Once the butter has melted, add the shallots, salt and rosemary.  Cook, stirring frequently for approximately 10 minutes.  Add the wine and balsamic vinegar to deglaze the pan.  Once the shallots are caramelized, remove from heat.
  3. Take the puff pastry cups out of the oven.  Add prosciutto pieces, caramelized shallots, mushrooms, and 2 tbsp goat cheese into each cup.  Bake for another 15 to 20 minutes, until the pastry starts to turn golden on the edges and the goat cheese softens.
  4. Remove from oven and let cool for 5 minutes.  Place on serving tray and drizzle with honey.  Enjoy!
