The best thing about Super Bowl is obviously the snacks! This Bocconcini Stuffed Buffalo Chicken Meatball recipe is the perfect way to enjoy the game, the halftime show, and the commercials with friends!

As we near the end of football season, Super Bowl comes ever closer. One of my favorite things about this time of year is planning my Super Bowl party eats to share with friends and family on the big day! These are the best meatballs to include in your game day menu. They are spicy, juicy, cheesy, and baked so even a little healthy. I would describe them as the meatball form of buffalo wings.. What more could you want out of a party appetizer?!

What Do I Need to Make Bocconcini Stuffed Buffalo Chicken Meatballs?

While the full list of meatball ingredients is available in the recipe card below, here are some tips on exactly what you will need to prepare the best buffalo chicken meatballs recipe! One thing I love about this recipe is how vibrant the flavors are while using such simple ingredients.

  • Ground chicken (ground turkey or another lean meat would work here too)
  • Panko bread crumbs
  • Green onions
  • Garlic powder
  • Large egg
  • Cocktail or pearl sized Bocconcini
  • Frank's Buffalo wing sauce (homemade buffalo sauce would obviously work well here too)

Other great additions to this game day appetizer include celery sticks, ranch dressing, blue cheese crumbles, or blue cheese dressing! I find they don't need anything extra but could also see how those additions would be fan favorites too!

How to Prepare The Best Buffalo Chicken Meatballs

While the full recipe instructions are available below, here are some tips to make one of the best meatball recipes ever!

  • Preheat your oven to 400F. In a large mixing bowl, add your ground chicken, panko bread crumbs, green onions, garlic powder, and egg. With clean hands, mix together all of the ingredients until they are well combined. Place your mixing bowl next to a prepared baking sheet lined with parchment paper. Using a cookie scoop or spoon, take a little bit of the meatball mixture out of the mixing bowl and form into a ball. Place either one cocktail sized or two pearl sized Bocconcini in the center of the meatball and wrap it around to cover the cheese. Place onto the baking sheet at an even distance from each other.
  • Bake for approximately fifteen to twenty minutes, until the chicken is cooked through and starting to look golden brown on the outside. While the meatballs cool on the baking sheet, pour the Buffalo sauce over them and toss to coat. Serve warm over a bed of celery leaves with whatever toppings you prefer and a little extra Buffalo sauce. Enjoy!

Another fun twist on this recipe could be to serve these as a mini meatball sub. Simply serve on toasted individual brioche buns with a little extra Buffalo sauce and some bleu cheese dressing and enjoy!

How to Prepare This Recipe Ahead of Time

One thing that makes these the best chicken meatballs is that you can prepare them ahead of time! If you want to prepare these one or two days in advance, cook the meatballs and let them cool completely without tossing them in the Buffalo sauce. Refrigerate in an airtight container until you are ready to eat them. Reheat the meatballs either in the microwave or the oven. Toss in the Buffalo sauce and serve.

If you want to prepare these further in advance, you could either freeze the meatballs after they have been cooked but before tossing in the Buffalo sauce. You could also prepare the raw meatball mixture and freeze it, then assemble the meatballs and cook them on the day you are planning to serve them. It really depends on how much time you plan to spend on them on the day you are hosting.

One other ingenious tip I need to share with you is how you can keep these meatballs from going cold and dry throughout your party. If you have a slow cooker or crock pot, they often have a setting called "keep warm". I love to place prepared items that are best served warm such as meatballs or slider patties in the slow cooker on this keep warm setting. The result is perfectly warm, juicy meatballs all night long!
